My first signature dish is inspired by one of my favorite sauces to pair with the rich and robust taste of a well seasoned tri-tip. Chimichurri stars as the focal point of this dish that ties the other distinct components together to create a mouth watering symphony of flavor. Perfectly seasoned and seared tri-tip is served medium rare over citrus charred broccolini with smashed pecorino fingerling potatoes, all tied together with a vibrant chimichurri that brings out the best flavors of every ingredient.
